Gorokhovnitsa

Put peas into a saucepan. Add water and leave for 8-10 hours. Wash peas out and boil on slow fire for 40-50 minutes. Cut and fry onions. Add fried onions to the boiled peas. Serve with butter.


Ingredients:
500 g of peas
2 big onions
50 g of butter

Russian salad

Boil potatoes and carrots in saucepan for 25-30 minutes. Boil eggs for 10 minutes and put them under cold water to shell them easily. Cut the eggs to a big bowl. Cut boiled sausage to the bowl. Cut pickled cucumbers to the bowl. Open a can of green peas and empty the can to the bowl. After potatoes and carrots cool down peel them and cut them to the bowl. Add salt and mayonnaise and mix everything thoroughly.


Ingredients:
500-600 g of potatoes (about 8)
300-400 g of carrots (about 4)
8 eggs
300 g of boiled sausage
200 g of pickled cucumbers (about 4-5)
350 g of green peas
250 g of mayonnaise

Pancakes with red caviar

Break 4 eggs to a big bowl and mix them. Pour half a liter of milk and mix it with eggs. Add enough wheat flour to get a liquid of sour cream density. Mix it very thoroughly. Add some pinches of salt and sunflower oil. Mix everything once more and start frying pancakes.

When pancakes are ready. Fold and roll each of them to get cone forms. Put some butter and red caviar into the cones.


Ingredients:
4 eggs
1 liter of milk
200-300 g of weat flour
200 g of sunflower oil
100 g of butter
200 g of red caviar

Pelmeni (small pockets of dough filled with minced meat and served boiled)

Pour out flour on the table. Form it like a volcano with a hole in the middle. Break an egg into this hole and add water and salt. Beat the dough until it become of plasticine consistence, then cover it and wait for 30-40 minutes.
Prepare stuffing: mix minced meat with minced onions, salt and spices.
Cut the dough to pieces and roll each piece so it gets thin. Put the dough on a special form with little holes. Put small pieces of stuffing on the dough above the holes, then make another thin dough and cover stuffing. Press the edges between stuffing with fingers, so that the dough gets cut on the holes edges. Push the pelmeni out of the holes from the other side of the form.
Boil for 5-10 minutes. Serve with black pepper and vinegar.



Ingredients:
3 glasses of flour
1 egg
2/3 glass of water
1-2 onions
1 k of minced meat
Black pepper
25-50 ml of vinegar

Rassolnik (soup with pickled cucumbers)

Peel and cut potatoes. Put them into the saucepan with boiling water and boil for 20 minutes. Cut and fry onions. In 20 minutes cut pickled cucumbers and put them into the saucepan for 10 minutes. Add spices. When the soup is ready put fried onions into the saucepan and leave for 10 more minutes. Serve with sour cream.


Ingredients:
1-2 potatoes
1-2 onions
5-6 pickled cucumbers
1-2 tablespoons of sour cream

Goloubtsy (stuffed cabbage rolls)

Separate cabbage to leaves: cut each leaf near the head of the cabbage, then cut the leaf from the head of the cabbage to the top of the leaf and carefully remove both halves from the cabbage. Boil cabbage leaves for 5-10 minutes.
Boil rice for 5 minutes (it should stay half-boiled). Cut and fry onions ands carrots. Add to rice. Add minced meat. Add salt and spices. Mix everything thoroughly.
Put the stuffing onto the cabbage leaves and roll them up the way you like. Put the cabbage rolls into pressure cooker, put tomato paste or tomato gravy on the top, add water. Cook for an hour.


Ingredients:
1-2 cabbages
500 g of rice
1 k of minced meat
2 onions
3 carrots
250 g of tomato paste or gravy

Vinaigrette

Boil beet for an hour, boil potatoes and carrots for half an hour. Pour out water and let the vegetables cool down. Peel of the skin and cut the vegetables to pieces. Cut and add onions. Cut and add pickled cucumbers. Cut and add sauerkraut. Add salt. Add oil and mix everything thoroughly.


Ingredients:
2 beets
4 potatoes
2 carrots
1 onion
5 pickled cucumbers
250 g of sauerkraut
100 g of oil

Kissel from cranberries

Mash cranberries. Pour out the juice. Boil the mashed cranberries for 5 minutes. Add sugar. Filter the compot from mashed berries. Add the juice.
Mix starch in cool water. Slowly pour starch into cranberry compot mixing it with a spoon and boil it for 2 minutes.


Ingredients:
500 g of cranberries
1 table spoon of starch

Buckwheat kasha with cutlets

Soak white bread in milk. Use meat grinder to mince potatoes, onions, garlic and soaked bread. Break eggs, add minced meat, salt, spices and mix everything thoroughly. Form the mass into a geometric figures :-) and fry them.
Boil buckwheat for 15 minutes, then let it stew for 10 minutes. When serving add butter to kasha.


Ingredients:
250-300 g of white bread
200 g of milk
1-2 potatoes
1-2 onions
3-4 cloves of garlic
4 eggs
1k of minced meat
300-500 g of buckwheat
25-50 g of butter

Shchi (cabbage soup)

Boil water. Peel and cut potatoes. Put potatoes to the boiling water and boil for 10 minutes. Add salt. Cut onions to small pieces and fry them. Put the sauerkraut to the boiling water and boil for 10 minutes. Put the fried onions to the boiling water and turn off the heat. Wait for 5-10 minutes before eating.



Ingredients:
2 potatoes
1-2 onions
300 g of sauerkraut

Pasta a la marine

Fry minced meat. Boil pasta in salt water. Put the pasta under running cold water for 3 minutes and then pour out cold water. Put out the pasta into the pan with fried minced meat, mix and fry everything for 3 minutes.

500 g of minced meat

Pancakes with mashed potatoes and meat

Break 4 eggs to a big bowl and mix them. Pour half a liter of milk and mix it with eggs. Add enough wheat flour to get a liquid of sour cream density. Mix it very thoroughly. Add some pinches of salt and sunflower oil. Mix everything once more and start making pancakes.

The art of pancakes for me is in spreading the batter all over the pan quickly and evenly. Also if you want to have safe and unharmed pancakes you should turn them over by throwing them up and catching them back on the pan. As I had no experience before I could do it right only with 30% of pancakes, others I helped with a shovel.

Ok. Let’s do the stuffing. Boil some potatoes in salt water, pour out water and mash potatoes (I add some milk while mashing). Cut onions to small pieces and fry onions with minced meat. Mix everything.

I fold the stuffing into pancakes the following way: put the stuffing in the center of the pancake and fold it from two sides, then I roll the pancake from one of its other two sides.

4 eggs
1 liter of milk
200-300 g of weat flour
200 g of sunflower oil
1 kilo of potatoes
2 big onions
500 g of minced meat
